POTATO CHIP COOKIES 
1 c. shortening (part butter)
1 c. white sugar
1 1/2 c. flour
1/4 tsp. baking soda
1 tsp. vanilla
1/2 c. chopped walnuts or pecans
1/4 c. chopped maraschino cherries (opt.)
1 egg
3/4 c. crushed potato chips

Cream the shortening and sugar. Add egg and mix well. Add flour, soda and nuts. Stir until mixed. Stir in vanilla, crushed potato chips and chopped maraschino cherries. Drop by teaspoonfuls onto ungreased sheet. Bake at 350 degrees for 15 minutes.
