SAUSAGE AND HAM OR CHICKEN
JAMBALAYA
 
3 c. sliced smoked sausage
3 c. diced ham, or chopped cooked chicken
2 lg. finely chopped onions
1 tbsp. oil
1 c. diced green pepper
2 cloves garlic, or use garlic powder
2 cans tomatoes (16 oz. each), also 1 can tomato paste
1/4 tsp. thyme, basil, marjoram, oregano, paprika
4 tbsp. fresh parsley
1/4 tsp. Tabasco sauce
2 c. long grain rice
1 tbsp. creole seasoning

In Dutch cooker saute sausage and ham until brown, remove and drain on paper towels. Add onions, green pepper and garlic to drippings, saute until tender. Stir in sausage, ham or cooked chicken, tomatoes, parsley and rice. Bring mixture to boil. Cover pot, lower heat, simmer about 1 hour, stir every 10 minutes. If mixture is too wet, uncover and cook a few minutes longer.

Creole seasoning is a mixture of:

1/4 tsp. red pepper
1/4 tsp. black pepper
1 tsp. chili powder
