SWISS STEAK | |
2-3 lbs. round steak, cut 1/2 - 1 inch thick 1/4 c. flour 1 tsp. salt 1/4 tsp. pepper 2 tbsp. salad oil 1 lg. onion 1 rib celery 1 qt. canned tomatoes 4 lg. potatoes, peeled and cut in half of 6 med. potatoes Preheat oven to 350 degrees. Trim off excess fat from meat. Mix together flour, salt and pepper. Lay meat on board, sprinkle with half of the flour mixture. Pound with a meat mallet then turn over and repeat with other side. Cut the meat into 6 or 8 pieces. Heat Dutch oven or large frying pan then add oil and fry meat until brown. Add onion slices and celery and fry until limp. If using a Dutch oven add tomatoes and top with potatoes. If using a frying pan place everything in a roaster pan or crock pot. Cover and bake in oven until tender, about 2 hours. Serve hot. Serves 6-8. |
