HOMINY CASSEROLE 
4 slices bacon, fried crisp
2 (#2) cans white hominy, drained
1 can Rotel tomatoes, diced
1 sm. can mushrooms, drained
Salt & pepper to taste
1 bell pepper, chopped
2 onions, chopped
1 or 2 tbsp. Worcestershire sauce
1/2 lb. Old English cheese, grated

Fry bacon in large skillet; remove and drain. Saute onion and pepper in drippings. Add crumbled bacon, mushrooms, hominy and remaining ingredients. Simmer a few minutes; pour into baking dish. Bake at 350 degrees for 20 minutes.

NOTE: You may drain off part of Rotel tomato juice, otherwise it could be too hot for some.
