EASY CHICKEN FAJITAS | |
1 lb. boneless, skinless chicken 1 lg. onion 2 green peppers 1 pkg. flour tortillas 2 c. shredded lettuce 1 diced tomato 1/2 c. shredded Cheddar cheese 1/2 c. sour cream Lightly brown cut strips of chicken in skillet with small amount of oil to prevent sticking. Once cooked slightly, add lemon juice, salt and black pepper to flavor chicken. Juices will start to boil away and you can add slices of onion and thinly cut strips of green peppers. Add more lemon juice and spices and cover. Cook at low temperature, covered, until vegetables are tender. Remove from heat. Heat tortillas in oven or microwave. Place small amount of chicken and vegetables along center cut of tortilla. Add tomatoes, lettuce, cheese and sour cream to taste. Roll over end of tortilla and fold in sides so that it resembles a burrito. Hold tight and enjoy! Makes 6 small or 4 large fajitas. |
