WHITE CHOCOLATE CAKE | |
1/4 lb. white chocolate 1/2 c. hot water 1 c. butter 2 c. sugar 4 egg yolks 1 tsp. vanilla 2 1/2 c. cake flour 1 tsp. baking soda 1 c. buttermilk 4 egg whites, beaten 1 c. pecans 1 c. coconut ICING: 2/3 c. evaporated milk 1 c. sugar 4 tbsp. butter 3 egg yolks 1 tsp. vanilla 1 c. pecans 1 c. coconut Melt chocolate in hot water and cool. Cream butter and sugar. Add egg yolks one at a time, beating after each addition. Add chocolate mixture and vanilla. Sift flour and baking soda together and add alternately with buttermilk. Don't overbeat. Fold in 4 beaten egg whites. Gently stir in nuts and coconut. Bake in 3 layers in 350 degree oven for 25 to 30 minutes. Let cool. To make the icing, bring to a boil the milk, sugar, and butter. Beat egg yolks well and add to mixture. Add vanilla. Cook over low heat until thick. Remove from heat and add the nuts and coconut.
