SAUSAGE AND ONION PARMIGIANA

1 loaf (8 oz.) Italian bread, or 12. oz. Orlando steak and sausage rolls
1 tbsp. plus 1 tsp. olive oil, divided
1 c. sliced onions
1 c. green pepper, sliced
1 c. red pepper, sliced
1 garlic clove, minced
15 oz. veal sausage, or 16 oz. Italian sweet sausage
2 oz. Mozzarella cheese, shredded

Cut bread lengthwise, place bottom 1/2 cut side up on foil. In 12 inch skillet, saute until light browned, 2 teaspoons oil, onions, peppers, garlic. Remove from skillet. In same skillet brown sausage in 2 teaspoons oil. Remove from skillet. Slice sausage diagonally. Then stir into onion/pepper mixture. Preheat broiler (low), spoon sausage mixture onto loaves, sprinkle with cheese. Broil until cheese melts 1 to 3 minutes, then add top 1/2 of rolls to make sandwiches.
