BRAN MUFFINS 
3 oz. ready to eat Bran Flakes with dates or Bran Flakes with raisins cereal
1 1/2 c. whole wheat flour
1/4 c. granulated sugar
1 tbsp. double acting baking powder
1 c. skim milk
1/3 c. plus 2 tsp. unsalted butter, melted
1 egg, beaten

Preheat oven to 400 degrees. In medium bowl, using a fork, combine cereal, flour, sugar and baking powder.

In 2 cup measure thoroughly blend milk, butter and egg; add milk mixture to dry mixture and using a fork, stir to combine (do not over mix or beat). Using a 12 cup non-stick muffin pan that has 2 1/2 inch diameter cups, spoon an equal amount of batter into each cup; bake for 15-20 minutes (until muffins are brown and a toothpick inserted in center of muffin, comes out dry).

(35 calories per serving). Makes 12 servings, 1 muffin each. Also can be frozen and thawed at room temperature.

If nonstick pan is not available, spray pan with nonstick cooking spray.
