6 WEEKS BRAN MUFFINS 
7 c. bran flakes
3 c. sugar
5 c. flour, whole wheat, white or half and half
5 tsp. baking soda
2 tsp. salt
4 eggs, tightly beaten
1 c. vegetable oil
1 qt. buttermilk
Raisins, chopped apples, nuts or dates (opt.)

In a large bowl stir together all dry ingredients. In a separate bowl blend eggs, oil and buttermilk. Add liquid mixture to dry mixture and stir to combine. Store batter covered in the refrigerator.

To Bake: Add raisins, chopped apples, nuts or dates if desired. Spoon batter into greased muffin tins (paper may be used) filling each cup 2/3 full. Bake in preheated 400 degree oven for 15 to 20 minutes. Makes approximately 1 gallon batter, enough for 4 dozen muffins.
