GREAT CHICKEN AND MUSHROOMS | |
1 c. mushrooms, (as many as you like) 4 deboned/skinned chicken breasts 1 onion 1 stick butter 1 tbsp. parsley 1 tbsp. tarragon leaves 1 tbsp. Dijon mustard (or gourmet mustard) Cook onion in butter, remove to plate. Brown chicken, remove to plate. Saute mushrooms, remove to plate. Mix parsley, tarragon and mustard into butter, then add onion, mushrooms and chicken. Cook on low, uncovered, for approximately 20 minutes, or until done. Serve with rice, if like. |
