SPICY APPLE CAKE 
1/3 c. boiling water
2 c. all purpose flour
1 1/4 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground cloves
3 eggs
1 c. chopped nuts
2 c. finely chopped apples
1 1/4 c. sugar
1 tsp. salt
1 tsp. ground nutmeg
1/2 c. vegetable oil
1 tsp. vanilla
1/2 raisins (optional)

Heat oven to 350 degrees. Grease and flour oblong pan, 13x9x2 inches. Beat ingredients except apple and raisins on low speed, scraping the bowl constantly, 1 minute. Beat on medium speed scraping the bowl occasionally, 2 minutes. Add chopped apples. Don't let apples stand. Pour into pan. Bake until wooden pick inserted in the center comes out clean, about 45 to 50 minutes. Cool and frost.
