SPICY APPLE CAKE 
5 tbsp. sugar
2 tsp. cinnamon
2 to 3 apples

DOUGH:

3 c. all-purpose flour
3 tsp. baking powder
1 tsp. salt
2 c. sugar
1 c. vegetable oil
4 eggs
1/4 c. apple juice
2 1/2 tsp. vanilla

Preheat oven to 375 degrees. Prepare the filling by mixing the sugar and the cinnamon. Set this aside. Pare and thinly slice the apples. In a large mixing bowl, blend the flour, baking powder, and salt. In a separate bowl, beat the sugar and oil together for 2 or 3 minutes. Add the eggs, one at a time, and beat until light. Blend in the apple juice and vanilla. Add the liquid ingredients to the dry and gently fold together. Pour a third of the batter into a well greased tube pan (or angel food cake pan) for a cake presentation. Then, place a layer of apples on the batter and sprinkle generously with the cinnamon/sugar. Repeat this layering, ending with batter and sprinkle the top with cinnamon/sugar. Using the tube pan, bake for 45 to 50 minutes. Press the top gently with your fingers to make sure it is thoroughly baked.
