SPIDER CORN BREAD | |
1 c. white or yellow cornmeal 1/3 c. all purpose flour 2 tbsp. sugar 1 tsp. salt 2 tsp. baking powder 1 egg, lightly beaten 1 c. + 3/4 c. milk 1/4 c. sweet butter 1. Preheat oven to 350 degrees. Place large iron skillet in oven. 2. Sift cornmeal with flour, sugar, salt and baking powder. 3. Beat egg with 1 cup milk. Beat egg and milk mixture into cornmeal mixture. 4. Melt butter in skillet. 5. Turn batter into skillet, then "float" remaining 3/4 cup milk over batter. Do not stir. 6. Bake about 30 minutes. Serve from skillet. Serves 6 to 8. |
