In large kettle place backbone - ribs, salt and pepper in 3 quarts water. Bring to boil and simmer 1 hour until tender. Drain. Arrange in single layer - meaty side up on rack in broiler pan (lined with aluminum foil). Baste with sauce. SAUCE: 1/2 c. ketchup 1/4 c. vinegar 1/4 c. chili sauce or 1 tsp. chili powder 1/4 c. oil 1/4 c. Worcestershire sauce 3 tbsp. finely chopped onion 1 tbsp. lemon juice 1/2 tsp. dry mustard 1 clove garlic, crushed 1 tsp. salt Combine all ingredients and simmer uncovered 1 hour. Add water if it becomes too thick. Brush meat with 3/4 of the sauce. Bring foil up and seal. Bake 1 hour in 300 degree oven. Turn foil back. Turn meat and baste other side with remaining sauce. Broil 10 minutes. Note: Cut ribs into serving size pieces. Allow 3-4 ribs per person. |
