SQUASH PIE (BUTTERNUT) 
1 1/4 c. cooked and strained squash
3/4 c. sugar
1/2 tsp. salt
2 tsp. flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1 or 2 eggs
1 c. warm milk

Bake pie crust 5 minutes at 400 degrees. Mix sugar, salt, flour and spice. Add beaten egg and mix. Add squash and warm milk stirring constantly. Bake in moderate oven 375 degrees until done.
