RICE MEATBALLS 
1 c. minute rice
1 lb. ground beef
1 egg, slightly beaten
2 tsp. grated onion
2 tsp. salt
Dash of pepper
2 1/2 c. tomato juice
1/2 tsp. sugar

Combine minute rice (right from box) with beef, egg, onion, salt, pepper and 1/2 cup tomato juice. Mix lightly, shape into balls and place in skillet. Pour rest of tomato juice over meatballs. Bring mixture to a boil, reduce heat and simmer, covered, 15 minutes, basting occasionally. Makes 6 servings of 3 balls each.
