CREAM CHEESE PIE OR CHEESECAKE 
CRUST:

1 c. graham cracker crumbs
1 tbsp. butter
3 tbsp. sugar

Mix and put in bottom of 10" spring pan.

FILLING:

1 c. sugar
3 (8 oz.) pkgs. cream cheese
4 c. sugar
1 tsp. vanilla extract
1 tbsp. lemon juice
1/2 pt. whipping cream

Beat all together with mixer. Beat whipping cream and fold into mixture. Smooth this on top of crust and bake at 350 degrees for 50 minutes.

TOPPING:

Mix 1 pint sour cream with 3 tablespoons sugar and 1/2 teaspoon vanilla. Can also top with cherries, blueberries, or other fruit.
