GERMAN STYLE SPINACH 
2 lb. fresh spinach (or frozen chopped spinach)
1 lg. onion (chopped fine)
4 lg. potatoes
1/4 lb. butter
2 tsp. salt
Dash of black pepper
4 tbsp. flour
1 1/2 c. milk

Wash and cook spinach. Drain and chop fine. Cook potatoes and mash into small pieces. Place butter in large pot. Saute onion in butter. Add flour gradually, then add chopped spinach and milk, stirring constantly, then add potatoes. Stir and season to taste.
