CRABMEAT SALAD 
1 lb. fresh crabmeat
1/2 c. celery, chopped fine
3 hard-boiled eggs, chopped
2 tbsp. lemon juice
2 tbsp. sweet pickle relish
Light mayonnaise
Salt and pepper
1/3 c. shallots, chopped fine

Mix all ingredients and serve on lettuce and slice of tomato. Sprinkle on paprika.
