RICE PILAF 
1/4 c. butter
1 sm. onion, finely chopped
1/2 c. diced celery
2 c. chicken broth
1 c. long grain rice
2 tbsp. chopped parsley

Combine butter, onion and celery in a 1 1/2 quart glass baking dish. Cook, covered, on HIGH for 3 to 4 minutes. Add chicken broth. Cook, covered, on HIGH for 3 to 4 minutes or until broth comes to a boil.

Stir in rice. Cook, covered, on SIMMER for 15 to 18 minutes or just until rice is barely tender.

Let stand, covered, 3 to 5 minutes before serving. Stir in parsley just before serving.

NOTE: Leftover meat, chicken, turkey or fish can be heated and combined with the cooked rice.
