RICE PILAF WITH DRIED FRUIT AND
ALMONDS
 
2 tbsp. butter
1/3 c. slivered almonds, blanched
1/2 c. dried apricots, quartered
1/2 c. pitted dates, coarsely chopped
1/2 c. golden raisins
3 green onions, sliced
1 (13 3/4 oz.) can chicken broth
1/2 c. water
1/2 tsp. salt
1/8 tsp. ground black pepper
1 c. long-grain rice

In medium saucepan, melt butter over medium heat. Add almonds; cook until lightly browned. Add apricots, dates, raisins and onions; cook 2 minutes. Add broth, water, salt, pepper and rice. Heat to boiling. Reduce heat to low; cover and simmer 20 minutes or until rice is tender and all liquid is absorbed.

Preparation Time: 5 minutes. Total Time: about 30 minutes. Number of servings: 6.

Kids will love the sweetness of the fruit and the crunchiness of the nuts in this side dish.
