SQUASH FRITTERS 
Makes approximately 18 small fritters.

2 c. grated summer squash (3 sm. yellow & 1 sm. zucchini)
2 tsp. minced onion
2 tsp. sugar
1/2 tsp. salt
1/8 tsp. pepper
5 tbsp. flour
1 egg, beaten
2 tsp. melted butter

Combine squash, onion, sugar, salt, pepper and flour. Add beaten egg and butter.

Drop by tablespoons into lightly oiled hot griddle or frying pan. Brown on both sides and serve immediately.
