THE SHACK BARBECUE SAUCE | |
6 tbsp. salt 6 tbsp. sugar 6 tbsp. black pepper 6 tbsp. chili powder 4 c. ketchup 4 c. white vinegar 4 c. water 1 lg. onion, finely diced Thoroughly combine salt, sugar, black pepper and chili powder. In a large heavy saucepan, combine ketchup, vinegar, water and onion. Stir in dry mixture. Bring to a rolling boil, reduce heat to low. Cook, uncovered for 1 1/2 hours, stirring every 10 minutes. Mixture will reduce by almost half to about 55 ounces. Pour into sterilized jars, put on shelf to "cure". |
