RICE PUDDING | |
2 c. rice 6 c. water 1/2 gal. milk 1/2 pt. Half and Half 6 eggs 1/2 c. raisins 1 1/2 c. sugar 1 tsp. vanilla More raisins for garnish Cinnamon for garnish Cook rice in water on top of stove according to package directions until rice is about 1/2 done (Cook until starts to form, but rice is still form). Drain rice, add milk and Half and Half. Whip together the remaining ingredients. Combine rice mixture and egg mixture thoroughly in a 15 x 9 1/2 inch pan. Set that pan inside a larger pan partially filled with water to create a double boiler effect. Cook in 350 degree oven, stirring occasionally, about 45 minutes to 1 hour until custard is firm. Remove from oven and sprinkle with cinnamon and more raisins on top if desired. Serve warm or cold. |
