BAKED POTATO SKINS 
2 baked potatoes
1 tbsp. oil

Halve and hollow out baked potato leaving a 1/4 to 1/2 inch rim on potato attached to the skin. Place potato skins on a nonstick baking sheet. Brush with oil.

Place the sheet in a preheated 475 degree oven for 15 minutes or until quite brown. Sprinkle with desired flavorings. (Such as vegetable salt, Parmesan cheese or herbs or sour cream or Cheddar cheese.) 4 servings.
