BEEF STROGANOFF | |
2 1/2 - lbs. prime sirloin steak, 1/2" thick 3 tbsp. butter 1 lb. mushrooms, washed, trimmed & sliced 3/4 c. minced onion 1 1/2 cans (16 oz.) condensed beef broth 3 tbsp. catsup 1 lg. clove of garlic, crushed 1 tsp. salt 4 1/2 tbsp. flour 1 1/2 c. sour cream Cut meat across the grain into 1/2 inch strips, about 1 1/2 inches long. Melt butter in large skillet. Add mushrooms and onions. Cook and stir until onions are tender. Then remove from skillet. In same skillet cook meat until light brown. Reserving 2/3 cup of the broth, stir in the remaining broth, the catsup, garlic and salt. Cover and simmer 15 minutes. Blend reserved broth and flour. Stir into meat mixture. Add mushrooms and onions. Heat to boiling, stirring constantly. Boil and stir 1 minute. Reduce heat. Stir in sour cream. Heat and serve over noodles. Serves 6. |
