1 box Jiffy corn bread mix
1 onion, chopped
6 oz. cottage cheese
1 stick butter, melted
1/2 tsp. salt
1 pkg. frozen chopped spinach, thawed & well drained
4 eggs, beaten

Mix all together. Pour into a greased Pyrex pan. (I use foil pan if carrying to someone.) Bake at 400 degrees for 30 minutes.
