CHOW MEIN 
1 c. chopped onion
1 c. chopped celery
1 green pepper, chopped
1/4 c. hot oil
1 can mushroom soup
2 tbsp. cornstarch
3/4 c. cold water
1/4 c. soy sauce
2 c. (approximately) shrimp, chicken, or pork
1 sm. can mushrooms, drained
1 can Chinese vegetables, drained

Combine onion, celery and green pepper; cook in hot oil for 2 minutes. Add mushroom soup. Blend cornstarch with cold water and soy sauce. Mix into soup mixture gradually.

Cook and stir until thickened. Add shrimp, chicken, or pork as well as mushrooms and Chinese vegetables. Heat until heated through. Serve with chow mein noodles or on rice or plain noodles.
