EGGPLANT SPAGHETTI SAUCE 
1 lb. hamburger
1/2 eggplant, coarsely chopped (approximately 2 c.)
1 can whole tomatoes, crushed
1 can tomato paste
1 small onion, coarsely chopped
1 small green pepper, finely chopped
1/2 tsp. oregano
1/2 tsp. basil
1 tsp. parsley
1 tsp. garlic, minced
1 tsp. sugar
1/2 c. water
Salt and pepper to taste
1/2 c. shredded Mozzarella cheese

Brown hamburger in large pan. Drain. Return to pan. Add whole tomatoes, tomato paste, oregano, basil, parsley, garlic, and water. Stir until well blended. Bring to boil, reduce heat. Add eggplant, onion, green pepper, and sugar. Cover and simmer for 45 minutes, stirring occasionally. Add salt and pepper. Serve over spaghetti or shells. Sprinkle with Mozzarella cheese.
