CONFETTI VEGETABLE CASSEROLE 
1/2 c. chopped onion
2 tsp. butter
1 (16 oz.) can French style green beans, drained
1 (16 oz.) can whole kernel corn, drained
1/4 c. chopped coarse green peppers
1 (10 3/4 oz.) can cream of mushroom soup
1 (8 oz.) container sour cream
1 sm. jar pimentos, drained
1 c. crushed crackers or potato chips or Ritz crackers

Saute onions in butter and drain well. Combine all ingredients and place in 9 by 10 inch square baking pan. Sprinkle crushed crackers or chips on top. Bake at 350 degrees about 20 minutes or until it bubbles. Serves 6 to 8.
