ENCHILADAS 
Enchilada sauce mix
1 (8 oz.) can tomato sauce
3 c. water
12 oz. Cheddar cheese
12 oz. Jack cheese
1 lb. ground beef
1 doz. flour tortillas
Sour cream (optional)

Combine contents of enchilada mix with tomato sauce and 3 cups water. Heat to boil. Simmer 15 minutes. Grate cheese. Brown meat. Drain. Add 1 cup of enchilada sauce to meat. Add half of cheese. Stir. Pour 1/2 cup of sauce in oblong 13 x 9 inch baking pan. Spoon small amount of meat mixture into flour tortillas.

Roll flour tortillas. Place seam side down in baking dish. After all 8-12 are rolled up and placed in baking dish, cover with remaining enchilada sauce and rest of cheese. Cover pan with foil. Bake at 350 degrees for 25 minutes. Makes 8-12.

If you like, when enchiladas are done cooking, top with sour cream.
