AUNT SHIRLEY'S ENCHILADAS | |
3 doz. corn tortillas 3 lbs. lean ground meat 1 lb. Cheddar cheese, grated 2 lg. onions, chopped fine SAUCE: 1 pkg. Lawrey's enchilada mix, make according to directions but use only 1/2 amount of water 1 family size can tomato soup 2 cans cheese soup 2 cans enchilada sauce Blend sauce ingredients well and use heated. Cook meat and onion until browned. Drain off grease. Add olives and combine. Fry tortillas until LIMP only. Using a 9 x 13 inch baking pan, coat bottom of pan with sauce. Dip tortilla in sauce, place in pan and spoon 1/4 cup meat mixture and small amount of sauce; roll up and continue until pan is full. Before putting in oven, spoon more sauce over the top. Then spread generously with cheese. Cover with foil and bake about 40 minutes in 350 degree preheated oven. |
