SUMMER GARDEN CASSEROLE 
1 c. Ritz cracker crumbs
1 lg. onion
1 lg. green pepper
3 sliced Irish potatoes
4 squash (yellow)
Grated Cheddar cheese, 1 c. or more
1 can cream of mushroom soup
1 sm. can evaporated milk
1 stick butter

Butter casserole 9x13. Sprinkle cracker crumbs on bottom of dish. Layer each of sliced onion, green pepper, potatoes, squash and cheese. Pour soup diluted with milk over vegetables and cheese. Sprinkle cracker crumbs on top. Bake 2 hours on 250 degrees, uncovered.
