FRIED PIE DOUGH 
2 qt. flour
2 1/2 c. shortening
2 tall cans evaporated milk
2 tsp. salt
3 tsp. sugar
3 tsp. baking powder
4 eggs

Sift dry ingredients together. Beat eggs. Add milk and heat well. Pour in dry ingredients and mix thoroughly. Dough should be stiff. Add a little flour if too sticky. Roll dough in waxed paper and refrigerate overnight. Next day roll out and cut circles size of 2 pound coffee can. Moisten edges with water. Fill center with fruit and fasten edges with fork to seal. (Half of this recipe makes 36 fried pies.)
