STUFFED GRAPE LEAVES | |
1 (8 oz.) jar grape leaves 1 lb. ground turkey meat 1 c. rice 1 head garlic, peeled 1/2 tsp. white pepper 1 tsp. allspice 1 1/2 tsp. cumin 1 tsp. salt Mint leaves Lemon juice Mix rice, meat and all spices (except garlic and mint). Rinse brine water off grape leaves and put about 2 tablespoons of mix on top of grape leaf (an amount about as big as your finger). Grape leaf should be shiny side down. Put meat mix at bottom of leaf. Fold one side of leaf in, then roll tightly from bottom, away from you. Place or layer in heavy metal pan with garlic and mint leaves. Cover with water. Bring to a boil, cover and reduce heat, after 20 minutes add lemon juice then cook for 20 minutes more. Test one to see if rice is completely cooked. Serve with yogurt sauce spiced with mint and garlic. |
