BUDGET STUFFED MANICOTTI 
1 lb. ground beef
2 (15 oz.) cans tomato sauce
1 (6 oz.) can tomato paste
1/4 c. water
1 (15 oz.) container cottage cheese
3 c. Mozzarella cheese, shredded
1 egg
12 manicotti noodles, cooked & drained

In a large saucepan, brown ground beef, drain and set aside. Stir in tomato sauce, paste and water. Simmer 15 minutes. Add 1/2 beef. In medium bowl, mix 1/2 of beef, cottage cheese, 2 cups Mozzarella cheese, egg and parsley. In a baking dish pour 1/2 of sauce mixture. Stuff noodles with cheese mixture, then place in dish and cover with remaining sauce. Top with rest of Mozzarella cheese. Bake at 350 degrees for 20 minutes.
