STUFFED ACORN SQUASH 
2 med. acorn squash
1 (10 oz.) pkg. chopped spinach, thawed and well drained
3/4 c. Parmesan cheese
2 hard cooked, finely chopped
1/4 c. softened butter
2 tbsp. chopped green onion
4 slices crisp cooked bacon

Halve squash place cut side down on cooked sheet cover and bake at 350 degrees for 45 to 60 minutes or until tender. Remove pulp, leaving 1/4 inch shell. In a large mixing bowl, combine squash and remaining ingredients except 1/4 cup of cheese and bread crumbs. Stuff into squash shell, sprinkle bread crumbs and cheese on top. Bake at 350 degrees for 25 to 30 minutes. Serves 4.
