COUNTRY FRIED CHICKEN 
1 frying chicken (2 1/2 to 3 lbs.) cut up or use chicken pieces
1/2 c. milk
1 egg
1 c. flour
2 tsp. garlic salt
2 tsp. Johnny's seasoning salt
1 tsp. paprika
1/4 tsp. poultry seasoning
1 tsp. pepper
Shortening such as Crisco

Blend milk and egg. Combine flour and seasonings in a plastic or paper bag. Shake chicken in seasoned flour. Dip chicken pieces in milk and egg mixture. Shake chicken a second time in seasoning mixture to coat thoroughly and evenly.

Melt Crisco in skillet to about 1/2 to 1 inch deep and heat to 365 degrees. Brown chicken on all sides. Reduce heat (275 degrees) and continue cooking until chicken is tender, about 30 to 40 minutes. Do not cover! Turn chicken several times during cooking. Drain on paper towels.
