STREUSEL COFFEE CAKE 
1 c. sugar
1/2 c. oil
2 eggs
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1 c. buttermilk
1 tsp. vanilla

TOPPING:

1/4 c. sugar
1/4 c. brown sugar
1 tbsp. butter
1 tbsp. cinnamon

Combine sugar and shortening. Beat eggs and add to sugar and shortening mixture. Add vanilla to buttermilk. Add dry ingredients and liquids alternately to sugar mixture. Set aside and mix topping.

Add 1/2 of topping mix to the above and place in greased 8 1/2 x 11 inch cake pan. Sprinkle remainder of topping on top of batter and bake at 350 degrees for approximately 30 minutes. Serve warm!
