CARROT SANDWICH BREAD 
1 c. finely grated raw carrots
1 c. brown sugar
1 tsp. baking soda
1 tbsp. melted shortening
1 c. boiling water
2 eggs
2 1/2 tsp. baking powder
1 tsp. salt
1 1/2 c. sifted all purpose flour
1 c. whole wheat flour
1 c. chopped walnuts

Combine carrots, sugar, baking soda, and shortening in a large bowl. Pour in boiling water and stir just to mix. Set aside until cool. Beat eggs then add to cooled carrot mixture. Sift in the baking powder, salt, and all purpose four. Stir in whole wheat flour. Fold in walnuts.

Pour into a greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. Let stand 5 minutes. Bake at 350 degrees for 1 hour. Remove from pan and cool on wire rack. Let stand in cold place overnight wrapped in plastic before slicing. Makes great finger sandwiches filled with cream cheese filling.
