CARROT - ORANGE BREAD 
4 eggs
2 c. sugar
1 1/4 c. oil
3 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. ground nutmeg
2 tsp. ground cinnamon
2 c. loosely packed shredded carrots
1 (11 oz.) can mandarin oranges (drained & chopped)
2 tsp. grated orange peel

(Oil pans well or spray.) Beat eggs and sugar. Slowly add oil and beat smooth. Sift flour, baking powder, soda and spices. Add together and beat until smooth. Stir in carrots, oranges and peel. Pat in two 9 x 5 x 3 inch loaf pans. Bake at 350 degrees for 45-50 minutes.
