SQUASH SOUP 
3 c. grated squash, or chopped
1 med. onion, grated or chopped
1 tbsp. butter
3 tbsp. flour
2 c. chicken broth
1/8 tsp. nutmeg
2 c. half & half
Salt & pepper to taste

Saute squash, onions in butter; add flour and stir until mixed. Add chicken broth and nutmeg and simmer for 45 minutes. Add 2 cups of half and half. Salt and pepper to taste.
