FRESH TOMATO PIZZA SAUCE 
1/3 c. olive oil
2 c. finely chopped onions
8 c. peeled, seeded, coarsely chopped tomatoes (put through blender, if desired)
2 (6 oz.) cans tomato paste
2 tbsp. oregano, crumbled
2 tsp. basil, crumbled
1 bay leaf
2 tbsp. sugar
1 tbsp. salt
1/2 tsp. pepper
2 tbsp. finely chopped garlic

Heat oil in large stainless steel pan, 6 to 8 quarts. Add onions and cook over medium heat for 6 to 8 minutes until transparent. Add garlic and cook another minute. Stir in tomatoes, paste, oregano, basil, bay leaf, salt, pepper and bring to a boil. Then simmer, uncovered for an hour or until thick. Stir occasionally. When finished the sauce should be thin and fairly smooth. Remove bay leaf. Taste and season. May be canned or frozen. 5 to 6 pints.

I've tried lots of recipes to use our tomatoes from the garden and this one is great! I made a batch to go with our pizza bites. The bowl was completely empty! I blanched our tomatoes, then put them through the food mill. I measured 8 cups to use in this recipe. Excellent consistency! Making a second batch to freeze.

Made this pizza sauce and it is excellent. I have several tomato plants and this is a great use of fresh tomatos. I used 9 or 10 medium sized tomatoes and cooked it about 1.5 hr but only got about 2.5 pints. Never the less, it is very good stuff.

I used this recipe minus the basil and it came out perfect! I broke it down to only half the amount and it was enough for my 13in pizza! I even used the extra sauce to make my boyfriend 2 meatball sandwiches to take for lunch! Simple and easy.. Saving to my fav.s :)

I made this and its delicious. It's a great recipe to use up all of your garden tomatoes in the summer. It freezes well in a plastic container or you can can it.

I have not tried this recipe as of yet but plan to. Thank you for putting out a recipe that calls for fresh tomatoes instead of canned as so many recipes on the web use canned tomatoes and call the recipe from "scratch".
