SOUTHERN CORN MEAL MUFFINS 
1 c. buttermilk
2/3 c. white corn meal
1/2 tsp. salt
1 tsp. sugar
1 egg
1 tsp. baking powder
1 tbsp. hot lard

Sift together meal, salt and sugar. Add slowly, half of buttermilk. Add unbeaten egg and beat thoroughly. Add remainder of milk, soda, baking powder and hot lard. Pour into hot muffin pans, which have been generously greased (iron muffin pans are best). Bake at 450 to 500 degrees for 15 minutes.
