PUMPKIN COOKIES 
2 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 c. shortening
1 c. pumpkin
1/2 c. nuts
1 c. sugar
1 tsp. vanilla
1 c. chopped dates or raisins

Sift together first 3 ingredients. Mix shortening, sugar, vanilla and pumpkin, then add dry ingredients. Then add nuts and dates or raisins. Drop by teaspoons on greased cookie sheet. Brush with milk and bake at 375 degrees until light brown. Makes 8 dozen.

I suggest using fresh pumpkin for these cookies.
