MANGO BREAD 
2 c. flour
1/2 tsp. salt
1 1/2 c. sugar
3 eggs
2 tsp. baking soda
3/4 c. oil
2 tsp. cinnamon
2 c. chopped mango
1/2 c. chopped nuts

Mix all ingredients. Pour into 4 x 9-inch bread pans. Let stand 20 minutes before baking.

Bake for 1 hour at 250°F.

Makes 2 loaves.

This recipe is an interesting variation on another traditional Bahamian recipe, banana bread.
