Prepare 1 package any flavor cake mix as directed on package. Pour into a greased 13"x9" or 13"x10" pan; set aside. (Strawberry flavor cake mix makes a fantastic cake.)

FILLING:

4 eggs
3/4 c. sugar
1/2 tsp. vanilla
2 lbs. ricotta cheese

Beat eggs for 2 minutes. Add vanilla, sugar and ricotta. Pour over prepared cake mix. Bake in 350 degree oven for 1 hour. After cake is done, sprinkle with confectioners' sugar. When cake is well cooled, cut into square pieces. This can be made ahead and frozen.
