TRI-COLOR PASTA SALAD | |
1 lb. tri-color fusilli, cooked 1 sm. red pepper, diced 1 sm. yellow pepper, diced 1 sm. red onion, chopped 1/4 c. chopped parsley (flat, Italian type) Salt and pepper to taste Mix all the above ingredients. Mix in dressing. Chill and serve. OPTIONAL: Mix in 1 can tuna or 1 cup chopped cooked chicken (white meat). Serves 6. DRESSING: : 2 tbsp. mustard (any style) 2/3 c. red wine vinegar 4 tbsp. balsamic vinegar 2 tbsp. water 1 c. vegetable oil Mix all ingredients. Use 1 cup of dressing for 1 pound of pasta. |
