COLD ASPARAGUS | |
1 1/2 lb. fresh asparagus 1 1/2 qt. water 1/2 tsp. baking soda Cut asparagus diagonally in 1 to 1 1/2 inch pieces. When water comes to a boil, put in soda, stir. Add asparagus for 1 1/2 minutes. Do not over cook. Remove from hot water and immediately immerse in ice water. Continue to add ice as needed to completely cool. Put in plastic sack and a covered container in the refrigerator; will keep several days. To serve, be sure asparagus is drained completely, then sprinkle with 1 teaspoon salt, 1 teaspoon sugar, 1 teaspoon sesame oil. Use more, if needed. Toss well and serve. |
