CRACKLIN BREAD - NEW METHOD | |
4 oz. finely diced cracklins - 1 c. 1 c. cornmeal 1 c. all-purpose flour 1 tsp. baking powder 3/4 tsp. salt 1 c. buttermilk 2 beaten eggs In mixing bowl stir together cornmeal, flour, baking soda and salt. Add buttermilk, eggs and beat until smooth. Stir in cracklins. Turn into greased 10 inch oven skillet. Bake at 425 degrees until done, 15 to 20 minutes. Cut in wedges. Serve warm. (May be made in pons.) |
